GOLS stands for Global Organic Latex Standard; GOTS stands for Global Organic Textile Standard. Check the certification scope and the materials in the exact model you select. “Organic” describes materials and production standards; it does not tell you whether a mattress will feel firm or soft.
The feel is a separate part of the decision. Latex has a responsive, buoyant character, and the coil system provides underlying support.
